INGREDIENTS:
Coriander leaves – 1 cup
Urad dhal – 3 tsp
Red/Green chilly – 3
Tamarind – small gooseberry size
Jaggery – ¼ tsp
Mustard – ¼ tsp
Cumin – ¼ tsp
Asafotedia – ¼ tsp
Salt
Oil – 1tsp
Lemon – ¼ slice
METHOD:
1. Wash mint and coriander leaves 2 or 3 times
so that the sand particles are washed of well.
2.
Take a pan add ½ tsp of oil and roast the
urad dhal and chillies.
3.
Remove it and then add mint and coriander
leaves and saute for 2 minutes until the water content evaporates.
4.
Switch of the flame and add tamarind and
allow it to cool.
5.
In a mixer, add the above along with jaggery
and salt and grind to a paste.
6. Take a pan and add the remaining oil, add
mustard and cumin, after it splutters add asafotedia. Transfer the contents of
the mixer to the pan and saute, switch
of the flame and add lemon juice and mix well.
7.
Now the chutney is ready.
