INGREDIENTS:
Urad dhal vada/Methu Vada - 6
Curd/ Yoghurt - 1 cup
Salt
For Seasoning
Mustard - 1/2 tsp
Cumin - 1/4 tsp
Urad dhal - 1/4 tsp
Green chilly - 2
Curry leaves - a leaflet
Coriander leaves - a little
Carrot - 3 tsp ( grated)
Asafoetida - a pinch
Oil - 1 tsp
METHOD:
1. Prepare Methu Vadas as given in this blog earlier.
2. Arrange the Vadas side by side in a plate or bowl.
3. Whip curd with a little salt (Vada has salt already) and pour over the vadas evenly. If needed add more curd.
4. Take a pan, add little oil, mustard, cumin, urad dhal and stir well until mustard splutters and urad dhal turns golden brown.
5. Add chopped green chilly and curry leaves.
6. Saute for a while and add grated carrot and coriander along with asafoetida.
7. Just give a mix and switch of the flame and wait until it cools.
8. Garnish the above seasoned items over the curd vada.
9. Tasty curd vada is ready to serve.

Note:
- Left over vadas can be used.
- If the vadas are little hard, soak in luke warm water for a minute before adding curd. The vadas will become soft and will absorb the curd and will be tasty.
