Rice roti is somewhat similar to Karnataka special Akki Roti. But here, we use rolling pin instead of spreading with hand. Moreover, the dough is prepared by adding boiling water to raw rice flour.

INGREDIENTS:
Raw Rice flour - 2 cups
Cumin - 1/2 tsp
Salt - 1/2 tsp
Oil - as required
METHOD:
- In a bowl, add rice flour, cumin, salt. Mix well.
- Boil 2 cups of water in a pan, add little by little to rice flour and mix with a spoon.
- Do not add all the water.
- Take a portion, and make a ball.
- If the ball is soft, stop adding water.
- When warm, sprinkle 2 tsp oil and knead well to soft dough.
- Divide to equal small balls.
- Take a ball, knead well.
- Dust some flour, using a rolling pin, gently spread the flour.
- While spreading be careful, see to that it doesn't break.
- If so add little flour, knead again and the spread using rolling pin.
- Heat a dosa tawa, add the spread dough.
- Cook well on both sides.
- Sprinkle oil on all sides.
- No need to brown.
- It will fluff and raise. Remove it, and cook the other one.
- Soft and tasty RICE ROTI is ready.
