TOPPING POWDER






Ingredients:- 
Coriander seeds or dhania  = 1/2 cup
Channa dal       = 4 tsp
Toor dal      = 4 tsp
Red chillies = 12
Peppercorns  = 10
Cumin seeds  = 1tsp
Badams = 12


Method:-
Dry Roast above ingredients in a pan, and make a coarse powder together and add it before any  seasoning.

IDLI MILAGAI PODI / IDLI PODI





INGREDIENTS:
            Urad dhal – 200g
            Bengal gram – 200g
            Red chilly – 100g
            Coriander seeds – 2 tsp
            Curry leaves – 2 leaflet
            Asafotedia – 1 tsp
            Salt
            Oil – 1 ½  tsp



METHOD:
1.    Take a pan and add ½ tsp oil and roast the urad dhal until golden brown and keep aside.
2.    Add ½ tsp oil and roast the bengal gram until golden brown and switch of the flame and add asafotedia and mix well.
3.    Add ½ tsp of oil and roast the red chillies,  coriander  seeds and curry leaves.
4.    Allow to cool.
5.    Take a mixer and add the above contents and salt and grind little coarsely.
6.    Now idli podi is ready.
7.    Podi idlies and podi dosas can be made using the above powder by mixing with gingelly oil.
           

SESAME IDLI PODI / ELLU PODI





INGREDIENTS:
            Sesame seed – 250g
            Red chilly – 100g
            Asafotedia – 1 tsp
            Oil – ½ tsp
            Salt

METHOD:
1.    Dry roast sesame seeds in low flame and allow it to splutter.
2.    Add oil in a pan and roast the red chilly. Add asafotedia and allow it to cool.
3.    Take a mixer, add chilly and salt and grind well.
4.    Add sesame seeds and whip in intervals. Do not grind.
5.    Now Sesame idli podi is ready.

Note:
            Sesame is a variety of oil seed. So, grinding too much will make the powder mushy.

RASAM POWDER/ RASA PODI





INGREDIENTS:
            Coriander seeds – 250g
            Pepper corn – 2 tbs
            Cumin seed – 2 tbs
            Red chilly – 5
            Toor dhal – 2 tsp
            Omam/Oregano – 1 tsp
            Turmeric powder – 1 tsp

METHOD:
1.    Dry roast all the above ingredients separately except Omam and turmeric.
2.    While the ingredients are little hot add omam, turmeric and mix well. Allow to cool.
3.    In a mixer, add all the above ingredients and grind coarsely.
4.    Now Rasam powder is ready.
5.    This powder will be less spicy.
6.    Pepper and chilly quantity can be altered according to individual taste.
