Potato Masala Roast | உருளைக்கிழங்கு வறுவல்



A quick & simple recipe with limited ingredients and occasional tossing makes a Mouth Watering Potato Roast or Potato Masala, உருளைக்கிழங்கு வறுவல்.

INGREDIENTS REQUIRED TO MAKE POTATO ROAST:-
Potato, peeled - 6 nos. ( approximately 300 to 400 gms)
Mustard Seeds - 1 tsp
Fennel Seeds- 1 tsp
Few Curry leaves
Asafoetida- 1/4 tsp
Finely Chopped Garlic - 1 tbsp
Salt - 1 tsp
Coriander Powder - 1 tsp
Black Pepper powder- 1 tsp
Sambhar Powder - 1 and 1/2  tsp ( or 1 red chilli powder )
Cooking Oil - 2 tbsp ( I used cold pressed groundnut oil)

Method:-
1. Slice potatoes & Clean it twice to remove excess starch. Cleaning after peeling helps to reduce starch content, which helps to avoid gastric problems. Always clean potatoes after chopping  or slicing and then proceed with Cooking.

2. Heat oil in a Pan / Kadai. Add mustard seeds and allow it to splutter.

3. Add Fennel seeds ( or Cumin seeds can be replaced), followed by Curry leaves, asafoetida.

4. Add finely chopped Garlic ( or replace with 1/2 tsp Finely chopped Ginger )

5. Sauté till Garlic changes color.

6. keep in low flame, add salt, Coriander Powder, black pepper powder,  Sambhar powder. mix well to avoid burnt.

7. Spread the aromatic Masala on all sides of the pan.

8. Add sliced potatoes without water & toss gently.  Cover and Cook for 5 minutes in low flame.

9. uncover the lid and toss again. now the potatoes turns semi Roast. repeat the process to get Potato Roast.

10. Potato Masala Roast is ready.

Brinjal Masala Roast | கத்திரிக்காய் மசாலா வறுவல்

in this recipe, we will see how to make brinjal masala without onion without garlic without tomato. using less oil, this recipe is made. also, the ingredients were readily available in our kitchen. very simple and easy recipe to make. prepare the Masala mix, coat it with brinjal slices and make roasts. Brinjal Masala Roast |
கத்திரிக்காய் மசாலா வறுவல் :-

1. To Prepare the Masala mix, grind the following in a mixie jar to a fine powder:-
Roasted Bengal gram = 1/3 cup
Turmeric powder = 1/4 tsp
Black Pepper powder = 1/4 tsp
Cumin Powder = 1/4 tsp
Sambhar Powder = 1 tsp ( or use Red chilly powder as per taste)
Coriander Powder = 1 tsp
Garam Masala Powder = 1/2 tsp ( or use Fennel seeds 1/2 tsp)
Salt = 1 tsp ( or as per taste)

2. Slice the Brinjal just before Roasting. Because Brinjal tends to darken. I used Half Kg Green Brinjal. it contains less seeds.

3. Coat the slices on both sides and set aside for 15 minutes. Coat the slices in batches.

 4. Heat 2 tsp of oil in a broad pan. I used hard anodised pan. I used hard anodised pan.

5. Gently place the slices. Roast it in low flame for 5 minutes. NO NEED TO COVER WITH LID.


6. After 5 minutes, gently flip the slices using a spoon. Allow to Roast for 5 minutes. Brinjal Roasting Aroma arises.

7. Oil oozes from the brinjal slices.

8. Each slices gets roasted using less oil in batches.

9. Tilt the pan, to a SERVING BOWL. Slices doesn't stick to the pan, if it is Roasted.

10. Enjoy the Brinjal Masala Roast with Rasam Sadham or Curd Rice

CARROT YELLOW PUMPKIN SOUP

Carrot along with Yellow Pumpkin Soup is packed with nutrients.



 CARROTS are loaded with vitamin A and beta-carotene. It strengthens our bones. Carrots have calcium and vitamin K, both of which are important for bone health. We almost stay indoors in this pandemic period. We need to support our health with  required nourishment to stay fit and fine.

Likewise, Yellow Pumpkins are enriched in beta carotene, and it contains other nutrients like  vitamin C, vitamin E, iron, and folate -- all of which strengthens the immune system (MUCH NEEDED DURING THIS COVID pandemic). More pumpkin in our diet, can help our immune cells to 💪work better to ward off germs. 

Finally, these two veggies were used to make this Healthy Soup.

Ingredients Required:-

Pumpkin - 1/4 cup
Carrot - 2 small size
Tomato - 2 small
Garlic - 3 
Ginger - 1/2 inch
Shallots/ small onion - 4
Pepper- 10 nos
Cumin - 1/2 tsp
Carrom seeds/ Omam- a pinch
Salt
Butter

Method:-

1.  Add all ingredients along with a cup of water and pressure cook for 3 whistles on high flame.
2.  Allow to cool.
3.  Add to a mixer and grind to smooth paste.
4.  Add butter to a pan, add paste allow to boil after adjusting to required consistency.
5.  Add salt, sugar
6. Add little pepper powder
7. Garnish with coriander
8. Healthy Appetizers/ Soup is ready...

😋 DotZa, using Homemade Pizza sauce

In this recipe, neither baking powder, baking soda nor instant yeast is used. Using dosa batter & homemade pizza sauce, i prepared this Dosa + Pizza = DotZa. Any toppings can be used. Here, i used capsicum. Adding grated cheese to this makes a perfect DotZa.

MULTI GRAINS VADAI

This recipe is similar to Masal vadai. In Masal vadai, we will use Kadalai paruppu / Gram dal. But in Multi Grains Vadai, i used Black Chenna dal, whole moong dal and Karamani, along with masalas viz.,  coriander seeds, fennel seeds, Cumin seeds etc. Finely chopped onion is added to the vadai mix. 
This multi-grains vadai remains crisp throughout the day.

CRISPY PASTA 😋 | EASY TEA TIME SNACKS | CRISPY PASTA 65 | KIDS FAVOURITE

An easy and interesting savoury snack recipe made with bajji bonda mix, boiled pasta and masala powders. It is an ideal tea-time snack recipe known for its savoury taste and also twisted and rolled appearance.  Savoury snack recipes are an essential part of many indian households. Generally, it is either made and served as a munching snack with a cup of tea or coffee or to be shared with friends and family.


CRISPY PASTA


INGREDIENTS:-

Boiled pasta

Bajji - Bonda mix

Masala powders

Salt - to taste

Idly/dosa batter

Oil for deep frying

Masala powders:-

Garam masala - dry ginger powder - black pepper powder – salt

 

Pasta cooking:- {4:1 = water:pasta}

Boil 4 parts of water with 1 tsp of oil and required salt, in a pan.

Add 1 part of pasta to it. Cook till pastas turn soft. Strain the water and transfer the boiled pastas in a bowl.

 

METHOD:-

Follow the above steps to boil pasta and cut into halves.

Add masala powders & salt to it.

Add chopped cabbage, bajji-bonda mix (any brand). Mix well.

NOTE:-

Along with cabbage, grated carrots, sliced onions, Chopped spring onions, chopped

coriander leaves, chopped curry leaves can also be added.

Add idly batter & a tsp of oil to pasta mix. This helps to retain the crunchiness in pasta,

while frying.

Now the pasta mix is ready for deep frying.

Heat oil in a pan. Into the hot oil, drop the Pasta mix using spoon. 

Flip it & fry. Remove from the oil when it turns golden colour.

 Repeat the process for the remaining. Crispy Crunchy Pasta is ready.
