CHUTNEY VARIETIES:-
Following are some of the simpliest and easiest form of Chutney varieties. It tastes similar to Restaurant style Chutneys.
It also tastes better with rava or sooji upma, rava idly, venpongal.
Simple Coconut Chutney:-
Ingredients:-
Grated Coconut = 1 cup
Pottu kadalai or Roasted split chickpeas = 2 tbsp
Salt to taste
Green chillies = 3 ( add more or less as per your taste)
Garlic = 2 cloves
For Seasoning :--
Oil --- 2 tsp, Mustard seeds --- 1 tsp, Urid dal --- 1 tsp,
chopped curry leaves --- 10 nos., Asafoetida powder- 1/4 tsp
Method:-
In a mixie, add all the ingredients given under ingredients section and make a powder.
( Note:- If we add fresh coriander leaves along with the ingredients list, it will become Coriander chutney or Green chutney.)
Now add water and make a paste by grinding. Add more water as per the consistency and store it in a bowl.
In a small pan, heat oil, and add mustard seeds. Let it splutter, then add urid dal, let it change its colour to golden brown. Switch off the flame and add curry leaves and asafoetida. And pour this seasoning on top of the chutney and mix it well.
Tips: If you want the chutney to look like a hotel chutney, then add a little milk (boiled and cooled).
We can add a small piece of ginger and a pinch of jaggery, it avoids gastric reflux or heart burns
