PANEER MIXED VEGETABLE CURRY




 
INGREDIENTS:
            Carrot – 2
            Onion – 1
            Capsicum – 1
            Cabbage – 1 cup
            Peas – 1 cup
            Tomato – 1 (small size)
            Spring onion – 1 cup (finely chopped)
            Coriander leaves – 1 handful
            Paneer – 1 cup (grated)
            Crushed Ginger and garlic – 1 tsp
            Mustard – ½ tsp
            Cumin – ½ tsp
            Fennel powder – 1 tsp
            Sambar Powder – 1 tsp
            Garam Masala powder – 1tsp
            Oil - 2 tsp
            Salt

METHOD:
1.    Take a Pan and add oil. Add cumin and mustard. After it splutters add curry leaves.
2.    Add onion and saute for 2 minutes.
3.    Add finely cut carrot, capsicum and cabbage.
4.    Add a little salt, so that the moisture content goes off soon. Saute well.
5.    Add finely chopped tomatoes and peas. Let it cook well till it comes together.
6.    Add  sambar powder, garam masala, fennel powder and salt.
7.    Sprinkle some water and close the pan for 2 minutes.
8.    Add Paneer and spring onion and saute for 2 minutes.
9.    Switch of the flame and add coriander leaves.
10.  Now the aromatic mixed vegetable paneer curry is ready
