BURFI VARIETIES --- Choco-Cashew-Badam Burfi







Ingredients

Maida ( or all purpose flour) = 1 cup

Sugar = 1 and 1/2 cups

Ghee = 3/4 cup

Coco powder = 2 tbsp

Cardamom powder = 2 tsp

Venilla essence = 1/2 tsp (optional)\

Badam = 10

Cashews = 10

Water = 3/4 cup


Method:


(i)   Make a powder of Badam and Cashews using mixie.

(ii)  Sieve the maida and keep it aside.

(iii)  Heat the ghee( till the smoke emerges) in a pan, add maida and stir in one direction for 3 mins.

(iv)  Add the coco powder and Cashews-Badam powder to it and stir in medium flame for 10 mins or till the raw smell goes. Add Cardamom powder and keep it separately.

(v)  In another Kadai, add sugar and add water (Sugar Moozhukum varai), to make sugar syrup.. One string padham is suitable. Switch off the flame.


(vi)  Now, Add Maida mixture to this Sugar syrup, and mix it in one direction.

(vii) Transfer to a plate which is greased with ghee.

(viii) Cut into pieces, when the sweet reaches room temperature.
