Simple Veg. Kurma |
I usually cook food like kootu, kurma using Pressure cooker. Because, it consumes less oil and cooking is made simple and easier.
To my view, in normal method, we need to stir and check frequently, whether it got over cooked or not. Also, in this method, there is no grinding of masalas except badam-cashew-broken channa dal paste. This paste acts as a thickening agent.
Ingredients:-
Vegetables --- 1 Carrot,
4 Beans,
a handful of peas,
2 potato and
1 Sweet potato ,
1 Big Onion,
1 Tomato
Red Chilli Powder -- 1/2 tsp
Coriander Powder -- 1/2 tsp
Garam Masala -- 1 tsp
Coriander leaves chopped -- as required
Method:-
Ginger ---- 1/2 inch,
Garlic ---- 6 cloves

Turmeric Powder -- 1/4 tsp
Red Chilli Powder -- 1/2 tsp
Coriander Powder -- 1/2 tsp
Garam Masala -- 1 tsp
Coriander leaves chopped -- as required
Star anise - 1
For Grinding :-
5 Cashews, 5 Almond, 2 tsp of Broken Channa Dal, 1 tsp of Fennel seeds and 1/2 tsp of Cumin seeds.

Method:-
Cut all vegetables as shown in the figure. Sweet potato gives texture to the Kurma. or we can use cauliflower also. Grind the ingredients given under for grinding, to a fine paste.
Heat oil in a pressure cooker, Add the ingredients given under seasoning, till nice aroma arises. Add Onion and saute for 2 minutes, add ginger-garlic . Now add all the vegetables except tomato and give a nice mix. Add tomatoes (diced) and add chilli powder, coriander powder, turmeric powder and garam masala powder. Mix together and add 1 and half cups of water, close the lid. Let it cook for 2 high whistles.
When the pressure releases, add the paste and allow to boil for 2 mins. Garnish with Coriander leaves.
Simple Veg. Kurma is ready to serve.
